fix(docs): make Lago Cloud a reference page and remove funnel pages - #711

Rewrite the Lago Cloud page with regions, API base URLs, usage ingestion, security, and getting started. Get started now holds only Lago Cloud and the self-hosted guides. Delete the self-serve, contract, and finance-workflow pages and redirect them to the canonical guides. Restore the homepage Guide card, flesh out the self-hosted overview, trim For agents and move it to the AI section, and clean inbound links and llms.txt indexes. Why
#707 moved Lago Cloud to the top of the Guide using thin evaluation pages and a sales-led Cloud page. People who landed there didn't find the docs they came for. Agents had nothing concrete to cite: no regions, URLs, security, or ingestion details. That kept Lago framed as "the self-hosted alternative".
